Atol de plátano is a nutritious drink made with plantain and served warm.
Atol de plátano is a popular drink in Central America, served for the obligatory ‘refacción’ (break time) during the mid-morning workday. I fondly remember the market stall vendors in Guatemala that would come to our office daily. To those who never made it out of the office, they sold the same hot drinks and snacks I would find on every street corner. Atol de plátano was always on offer; arroz con leche was another favourite.
- 1. Peel and cut up the plantains into large pieces
- 2. Add the water, plantain, and cinnamon stick to a large pan. Cover and bring to the boil.
- 3. Cook for approximately 10 more minutes, stirring occasionally
- 4. Remove the cinnamon stick and put the plantain pieces into a blender with a little of the water they were cooking in. Blend until smooth
