Sunshine Mango Salsa

This salsa fills your plate with bright colours and fresh, intense flavours that will awaken your senses any time of day.

It can be ready in less than 10 minutes and only uses raw, easily sourced ingredients.

The secret is to use large, ripe mangos then cut them like a pro. If you didn’t know there was a certain way to cut a mango, don’t worry neither did I. However, I do strongly recommend you spend 2 minutes of your time watching this video. You will never cut a mango the same again.

I served this salsa as a side dish with grilled fish. Some of you might find this overpowers the fish flavour. It will go equally well with tacos, quesadillas or alongside other salads. You decide.

  1. Peel and dice the onion, add to a medium-sized bowl and squeeze over the juice of one lime, stir
  2. Now dice the mangos, the chilli and the cilantro, add to the bowl and gently mix together with the onion
  3. Squeeze over the juice of the other lime; add salt to taste and more lime if needed
  4. Leave to rest for 20-30 minutes in the fridge before serving and you’re done. ¡Listo!
